National Fish and Chips Day is all about appreciating the mouthwatering British classic of the ages. Did you know that, by law, the English used to have fish on a Friday? With that, it helped create the tradition of having a fish supper. Today, millions of us enjoy a chippy dinner, and you just can’t beat that freshly fried battered cod or haddock with those distinctive thick-cut chips; and ketchup, scraps, mushy peas, curry sauce - the options to enrich your fish supper are almost endless. Most of us have the convenience of a fish and chip shop nearby, so today’s the perfect day to pay them a visit, or if you want the freshest succulent battered cod (skin-on? skin off? it’s your choice), try your own perfect fishcake, or indulge in home-fried chips then why not create your fish supper at home yourself?

Make your own batter

Every good fish supper relies on a great batter, and everyone’s had the experience of a batter that’s too dry and tough as well as cakey and undercooked mush so it’s important to get it right. We recommend this simple but delicious batter mix, ideal for home-frying:

For approximately 6 servings you’ll need: 125g plain flour, 120ml milk, 120ml water, tablespoon of baking powder, large pinch of salt.

Simply whisk together the flour, water, milk, baking powder in a bowl thoroughly until smooth. Dip and coat your fish in the batter before deep-frying in hot oil for a few minutes until golden.
